Healthful Vegan Banana Cake
Preheat oven to 380 -390
Dry ingredients, Mix all together:
2.5 cups plantain flour
½ cup Vital wheat gluten flour
Tsp baking powder
½ cup walnuts pieces
Wet ingredients, mix well in high speed blender:
2 cups unsweetened vanilla almond milk
1/2 cup melted coconut oil
Tabls apple cider vinegar
1 apple
1 banana
15 Medjool dates
Note: you can add cocoa powder, instant coffee, cinnamon, whatever you like to spice it up a bit. Before placing in oven, i took one teaspoon of figs syrup (100% pure figs) and spreaded over the cake
Combine wet and dry ingredients and mix well, pour into a baking pan and bake for 35 minutes or until fully baked. I normally test by inserting a knife through the cake and if it is dry, the cake is baked.
